Abattoir process hygiene assessment tools are available for UK meat processors of beef, lamb, pork, chicken and turkey.  A paper given at the Safe Pork 2009 international conference described the pork tool and outlined the general approach adopted by all of the tools.  The paper is available by clicking here.
